PINEAPPLE DROP COOKIES 
2/3 c. shortening
1 1/4 c. light brown sugar
2 eggs
3/4 c. crushed pineapple, drained
2 c. sifted flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda

Preheat oven to 425 degrees. Cream shortening and sugar. Add in eggs. Beat mixture. Add pineapple. Beat mixture. Sift in flour, baking powder and baking soda into mixture. Beat mixture until well blended. Drop by tablespoon onto greased cookie sheet. Bake for 5-7 minutes.
