ZUCCHINI BREAD 
3 eggs, beaten
2 c. sugar
1 c. Crisco oil
2 c. coarsely grated zucchini, unpeeled
3 tsp. vanilla

Mix in that order and add dry ingredients. 1 tsp. salt 1 tsp. baking soda 2 tsp. cinnamon

Add chopped walnuts. Bake for 1 hour at 325 degrees or until done with toothpick test. Frost with powdered sugar icing. 2 loaves.
