YAM PIE 
2 lbs. yams
1/2 c. butter
1 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
1/2 tsp. salt
1 c. brown sugar
2 tbsp. sugar
3 lg. eggs, separated
1/2 c. orange juice
1 tbsp. grated orange rind

Peel and boil yams until mashable (canned is fine). Preheat oven to 450 degrees. Add butter, sugar, spices and salt to hot yams. Beat until light and smooth. Beat egg yolks until light and add to mixture. Stir in orange juice, rind and milk. Beat egg whites until stiff and fold in. Pour into unbaked pie shell. Bake at 450 degrees for 10 minutes. Reduce heat to 350 degrees and bake for 30 to 35 minutes until firm in the middle. Cool on rack, (add whipped cream if desired).
