LAURA GRAVES' LEMON MERINGUE PIE 
1 1/4 c. sugar
1/4 c. cornstarch
1/4 tsp. salt
1 1/2 c. water
3 egg yolks, slightly beaten
1/4 c. lemon juice
1 tbsp. grated lemon rind
1 tbsp. butter

Combine sugar, cornstarch and salt, add water, mix well. Cook over heat stirring constantly until mixture boils. Beat a little of the hot mixture into the egg yolks. Stir egg yolk mixture into the remaining cooked mixture and bring to a boil, remove from heat add lemon juice, rind and butter. Pour in baked shell. Beat egg whites add sugar for meringue top.
