VEGETABLE BURGERS | |
2 c. shredded carrot 1 c. cooked brown rice 1/2 c. chopped onion 1/2 c. chopped almonds 1/2 c. fine dry bread crumbs 1 tbsp. parsley, chopped 1/2 tsp. ground ginger 1/4 tsp. pepper 1/2 tsp. ground coriander 4 egg whites 2 tbsp. soy sauce Non-stick spray coating In a large bowl, stir together carrot, rice, onion, almonds, bread crumbs, parsley, ginger, coriander, and 1/4 teaspoon pepper. Stir together eggs and soy sauce; add to rice mixture and mix well. Cover and chill. Shape rice mixture into 6 patties. Spray a baking sheet with non-stick spray coating. Place patties on baking sheet. Broil 3 to 4 inches from heat for 3 to 5 minutes on each side. 6 servings. |
