POTATO SKINS 
Baking potatoes
Cheddar cheese
Bacon bits
Sour cream (optional)
Salt
Pepper
Chives (optional)

Scrub potatoes well. Microwave or bake in foil until almost done. Bake potatoes without foil for 30 minutes at 400 to 425 degrees. Remove from oven and split length-wise. Scoop out until only shells remain. Sprinkle with salt, pepper, and grated cheddar cheese. Return to oven until cheese is completely melted. Top with bacon bits and serve with sour cream and chives. Also good with Ranch dressing.

Since microwave ovens vary in power, you may need to adjust your cooking time.
