SWEDISH PANCAKES | |
2 eggs 2 c. milk 3/4 c. flour 1/2 tsp. salt 1 tbsp. butter, melted To fry: 1 to 2 tbsp. butter Beat together the eggs and half of the milk in a bowl. Add the flour and salt. Beat until smooth. Add the rest of the milk and the melted butter. Let it stand 15 to 30 minutes. Fry a little of the butter in the frying pan. Pour 1/2 cup of the batter into the pan and let it cover the bottom. Cook until edges are dry. Turn: Cook until golden. Makes 5 to 6 pancakes. Stir the batter every now and then while frying. Keep the pancakes warm in oven at 200 degrees under aluminum foil. Serve with strawberry jam and vanilla ice cream. (Wrap the pancakes like rolls.) Recipe can easily double, x 2. Serves 2. |
