BLACK BEAN AND RICE SALAD 
2 c. cooked rice, cooled to room temperature
1 c. cooked black beans
1 c. chopped fresh tomatoes
Lettuce leaves
1 c. shredded sharp cheese
1 tbsp. snipped parsley
1/4 c. prepared Italian dressing

Combine rice, beans, tomatoes, cheese and parsley in large bowl. Pour dressing over rice mixture. Toss lightly. Serve on lettuce leaves, if desired. Serves 4.
