COCONUT DELITE PIE 
FILLING:

3 eggs, beaten
1 c. butter, melted
1 c. uncooked, quick cooking oatmeal
1 c. coconut
1 c. sugar
1 c. white corn syrup
1/4 tsp. salt
1 tsp. vanilla
2 tbsp. flour

CRUST:

1 1/4 c. flour
1/4 tsp. salt
1/2 c. Crisco shortening
4-6 tbsp. ice cold water

Mix ingredients only to blend, then roll out, handle as little as possible. Mix all ingredients and pour into a 9" to 10" pie crust. Bake at 350 degrees or until knife inserted in center comes out clean.
