SQUASH CASSEROLE 
1 lb. yellow crook neck squash
2 eggs
1 stick butter
1 c. cheese, cut bite size
1 lg. onion
1 tbsp. sugar
10 crumbled crackers
Salt and pepper
1/2 c. milk

Cut up squash and onion and boil in salted water until real tender. Drain, add butter and mash well. Add crackers, eggs, sugar, seasonings, and milk. Stir well. Then add cheese. Pour into greased casserole dish and bake at 300 degrees for 1 hour. Sprinkle with cracker crumbs the last 15 minutes of baking time and add pats of butter and brown.
