NON-DAIRY WHOLE WHEAT BISCUITS 
1 1/4 cups whole wheat flour
1 1/4 cups all-purpose white flour
1 tsp. salt
1 1/2 tbsp. baking powder
1/2 cup coconut oil
1 cup soy milk

Mix flours, salt, and baking powder in a bowl. Add coconut oil and mix until small pellets are formed. Add soy milk and mix until a good, doughy consistency. Roll onto lightly floured surface until the dough is about 3/4-inch thick. Cut into 2 1/2 to 3-inch circles.

Bake at 350°F for approximately 15 to 20 mins or until medium brown on the bottom.

Variation: For white flour biscuits, use 2 1/4 cups all-purpose white flour.

Makes about 12 biscuits.
