OVERNIGHT SALAD 
2 c. boiled chicken, cut up
1 c. grated carrots
2 c. shredded cabbage
1 sm. onion, chopped fine
1 c. celery, diced
1 c. frozen peas, thawed
1 c. Miracle Whip
1 c. sour cream
1 can red salmon, flaked or 2 c. diced ham (optional)
Diced pimento bits (optional)
A bit of lemon juice (optional)
1 can shoestring potatoes

Cut up chicken, carrots, cabbage, onion, celery, and peas. Place in large bowl. In separate bowl, mix Miracle Whip with sour cream and add to other ingredients. Cover and refrigerate overnight.

Just before serving, add, fold in 1 can shoestring potatoes. Serve.
