JAMBALAYA 
1 lb. kielbasa, sliced
1/2 c. chopped onion
1/2 c. chopped celery
1/2 c. chopped green pepper
1 c. chopped ham
1 c. chopped cooked chicken
2 1/2 c. long grain rice
1 sm. can tomato paste
5 1/4 c. water
1 tsp. thyme
1 tsp. oregano
1 tsp. pepper
1 lg. bay leaf
1 tsp. minced garlic
6-8 dashes Tabasco

Brown sausage in large pot. Add onion, celery and green pepper. Saute until onions are clear. Add ham and chicken. Cook 2-3 minutes more, add spices. Add tomato paste and water. Bring to boil. Add rice. Mix well. Cover and simmer 40-60 minutes until rice is tender. 6-8 servings.
