SPANISH RICE 
1 bell pepper, chopped
1 sm. onion
1/2 c. celery, chopped
1 sm. clove garlic
Salt and pepper
3 tsp. olive oil
1 can tomatoes
1 can tomato sauce
1 beef bouillon cube
1 tsp. dry parsley
2 strips bacon, browned and crumbled up
3 slices cheese

Saute onion, bell pepper, garlic, celery in olive oil until wilted - add salt and pepper. Add rice and brown rice lightly - add dry parsley. Add tomatoes, tomato sauce and bouillon cube. Simmer until hot. Cover with cheese. Bake 20- 30 minutes in 300 degree oven.
