MANGO CURRIED CHICKEN SALAD | |
1 (8 to 10 oz.) jar chutney 1 c. mayonnaise 1 1/2 tbsp. curry powder 1 lg. broccoli, stemmed and cut into florets 4-5 lb. boned chicken breast, poached and chilled 1 lg. red bell pepper, cut in cubes 1. Put chutney, mayonnaise and curry in bowl and mix well. Cover and chill 1 hour. 2. Steam broccoli for 1 minute and drain. 3. Cut chicken into chunks. 4. Combine chicken, broccoli, and red pepper. Add chutney mixture to chicken. |
