CHICKEN FAJITAS | |
2 tbsp. lima juice 1 tsp. vegetable oil 1 lg. clove garlic, minced 1/4 tsp. salt 1/8 tsp. black pepper 1 lb. skinned & boned chicken breasts 8 flour tortillas 2 c. bottled salsa 1 sm. avocado, peeled, pitted, thinly sliced 2 c. coarsely shredded lettuce 1/2 c. plain low fat yogurt or sour cream Preheat broiler. Combine lime juice, oil, garlic, salt and pepper in a medium-size bowl. Add chicken and marinate for 10 minutes. Drain chicken and broil, approximately 3-4 minutes on each side. Warm tortillas in oven, wrapped in foil. Cut chicken in thin slices. Unwrap tortillas. Place some chicken in the center of each one. Top with salsa, avocado slices, lettuce and yogurt, then roll up each tortilla. Serves 4. |
