FRENCH ONION SOUP 
6 to 8 yellow onions
2 tbsp. oil
1/4 c. butter
1 yellow onion
2 tsp. sugar
2 tbsp. butter
1 clove garlic, chopped
6 c. beef broth
2 c. white wine
Salt & pepper to taste
French bread
Grated fresh Parmesan cheese

Slice onions very thin. Heat oil and 1/4 cup butter, saute onions until very dark. In remaining butter, cook whole onion on all sides until golden - sprinkle with sugar and cook until very brown. Add to sliced onions with broth and wine. Simmer at least 30 minutes. Put soup into serving bowls, top with slice of French bread and sprinkle with grated cheese. Broil until cheese is melted.
