PORTUGUESE RICE 
1 onion, diced
2 cloves garlic, sliced
2-3 tbsp. butter
1 c. cooked rice (or Minute Rice)
1 can chilies, diced
1/2 brick Monterey Jack cheese, sliced in thin strips
1/2 brick Mozzarella cheese, sliced in thin strips
2 cans beef broth

Saute onion and garlic in butter. Add rice, mix thoroughly. In casserole dish spread a thin layer of rice, then chilies, then cheeses. Repeat. Pour beef broth over layers. Bake at 350 degrees for 1 hour.
