APPLE BUTTER 
16 c. thick applesauce
8 c. sugar
1 c. vinegar
4 tsp. cinnamon

Core and slice apples with peel, add only enough water to cook the apples until soft. Press through a fine sieve and measure.

Combine all ingredients and cook slowly until the mixture is thick and shiny. (If placed in the oven to cook scorching can be prevented.) Oven cooking takes about three hours at 325 degrees. Pour into sterilized jars and seal while hot.
