BAKED MINESTRONE | |
1 1/2 lbs. stew meat 1 clove garlic, minced 1 tbsp. oregano 3 cans condensed beef broth 1 can zucchini 1 can kidney beans 1 lg. can tomatoes 3 tbsp. olive oil 1 onion, chopped 2 cans water 1 c. carrots, sliced 1 can pitted olives 1 c. shell macaroni Heat oven to 375 degrees. In heavy Dutch oven, mix meat, oil, garlic, onion and oregano. Bake uncovered one hour, stirring twice. Add broth, water and carrots. Bake covered one hour. Add zucchini, olives, kidney beans and tomatoes (all with juices). Bake uncovered for 45 minutes. Add macaroni; bake 30 to 45 minutes. Serve with garlic bread and Parmesan cheese. |
