YANKEE SALMON PIE | |
1 (8 oz.) pkg. mashed potatoes (family size) 1 pkg. pie crusts (Pillsbury) l lb. red salmon (from the market) salt and pepper, to taste (I use Morton's seasoning salt) Preheat oven to 425°F. Cook potatoes in microwave until done. Place salmon in frying pan cooking until done. Drain and place potatoes and salmon in large bowl. Stir together thoroughly adding your seasoning Place bottom pie crust in 9-inch pie plate then add your top pie crust. Bake at 425°F for 45 minutes or until brown Serve with English peas and salad. Variation: Some people use canned salmon (2 cans, deboned and drained). Using chopped onions can be optional according to your taste. Submitted by: Lorna Hathaway |
