SPANISH RICE 
2 tbsp. shortening
2 c. uncooked rice
1 sm. chopped onion
1 stalk celery
Salt to taste
1 sm. can tomatoes
1 can green chilies
3 c. cold water
1/2 c. grated cheese

Brown rice in hot shortening. Add onions, celery, tomatoes, chili, salt, water and cheese. Cover and simmer slowly until rice is dry and thoroughly cooked. To make rice dry, take off the lid of the pot for 10 to 20 minutes before serving.
