CARROT CAKE 
2 c. grated carrots
1/3 c. hot water (let carrots sit in it)
2 c. flour
1 1/2 c. sugar
1 1/4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. cloves
1/2 c. vegetable oil
3 eggs
1 tsp. vanilla
1/2 c. raisins
1 c. nuts, chopped
1 sm. can crushed pineapple (drained)

Mix wet ingredients together; then mix dry ingredients in separate bowl. Combine the two. Bake in a 350 degree oven for 45-50 minutes. Makes 1 Bundt cake or two layers for layer cake.

FROSTING:

1 stick butter, softened
8 oz. cream cheese
1 box powdered sugar
1 tsp. vanilla

Cream together all of the above ingredients and spread on cake.
