ONION QUICHE 
1 pkg. crushed saltines (19-20)
1/4 c. butter
2 1/2 c. sliced onions
1/4 c. butter
3 eggs
1 c. scalded milk
1 tbsp. flour
Dash cayenne
1/2 lb. grated Swiss cheese

Melt 1/4 cup butter and combine crushed saltines. Press into 9" pie pan.

Saute sliced onion in 1/4 cup butter until transparent. Spread in pie shell.

Combine 3 eggs, scalded milk, flour, cayenne and Swiss cheese. Pour over onions and bake at 325 degrees for 40 minutes.
