GREEN ONION - BACON QUICHE 
6 slices bacon
1/4 c. green onion, sliced
Pastry for 1 (8 inch) pie crust
1 c. Swiss cheese, shredded
3 eggs, beaten
1 c. milk
1/2 tsp. dry mustard
Dash of ground nutmeg

Cook bacon until crisp; drain, reserving 1 tablespoon drippings. Crumble bacon. Cook onions in drippings until tender. Roll out pastry. Line 8 inch pie plate with pastry (do not prick); flute edges. Bake at 325 degrees for 10 minutes. Layer cheese over bottom of pastry; add bacon. Combine eggs, milk, seasonings and 1/4 teaspoon salt. Pour over cheese. Bake at 325 degrees until set, 45 to 50 minutes. Let stand 10 minutes before serving.
