CHINESE BAR-B-QUED RIBS 
4 lbs. fresh spare ribs
3 tbsp. soy sauce
5 tbsp. Hoi Sin sauce
2 tbsp. dry sherry or vermouth
1/4 tsp. 5-spice powder
1 tbsp. sugar

Have butcher cut ribs for serving size. Mix soy sauce, Hoi Sin sauce, wine, 5-spice powder, and sugar in large bowl. Marinate ribs in mixture for at least one hour.

Place ribs on rack in roasting pan containing 1 1/2 to 2 inches of water and roast slowly at 350 degrees for one hour or until done. Add more water if necessary. Baste ribs with sauce half way through cooking. After the ribs are cooked, remove water from pan and turn oven up to 450 degrees and brown both sides. Serve with sauce.
