GOOD LUNCH ROLLS 
1 packet dry yeast
1 1/4 c. milk, scalded and cooled
1 tbsp. sugar
1 tsp. salt
4 c. flour
1 egg
2 tbsp. shortening

Dissolve yeast in 1/4 cup water (110 degrees) with 1 teaspoon sugar. When milk is cooled to 110 degrees, put in mixing bowl. Add sugar, salt, and yeast and 2 cups flour. Mix well. Add well beaten egg and shortening; add rest of flour gradually until a soft dough is formed. Let dough rise until double in bulk. Punch down and let rise again. Form into small biscuits and let rise until about double in size. Bake at 350 degrees until golden brown. These may be brushed with egg and milk, if desired.
