SWISS VEGETABLE MEDLEY 
1 bag of medley vegetables, thawed and drained
1 can cream of mushroom soup
1 can onion rings
1 c. shredded Swiss cheese
1/3 c. sour cream
1/4 tsp. pepper

Combine vegetables, soup, 1/2 cup cheese, sour cream, pepper, and 1/2 can onion rings in 1-quart greased casserole. Bake covered at 350 degrees for 30 minutes. Top with rest of cheese and onion rings. Bake 5 minutes uncovered.

I used fresh vegetables, cut them up and boiled them 3 minutes then added them to the sauce. I also added heavy cream to the bowl. I substituted fiesta blend grated cheese instead of swiss.
