BASIC MEAT BALLS 
1 lb. ground beef
1/4 c. fine dry bread crumbs
2/3 c. chopped onion
1 tsp. salt
Dash of pepper
2/3 c. evaporated milk
2 tbsp. butter

Combine the first 6 ingredients. Shape into 12 meat balls (a scant 1/4 cup each) or 36 small balls, about 1 tablespoon each. Melt the butter in a skillet. Brown the meat balls in the butter. Serve with any of the variations given below. Meat balls may be made earlier in the day and heated slowly in the sauce. Basic meat ball recipe can be used for hamburgers, meat loaf, or as filling in cabbage rolls or green peppers.
