LECHE FLAN 
1 dozen egg yolks
1 can Eagle Brand condensed milk
1 (12 oz.) can evaporated milk
1/2 tsp. vanilla
1/2 tsp. lemon juice
Sugar

Preheat oven to 350 degrees. Mix together all ingredients except for the sugar. In a glass pie pan, spread bottom with sugar. Put pie pan in oven or heat on stove just on enough to brown the sugar and melt it. Pour egg mixture into pan. Bake for about 1 hour or until a knife can come out of it clean. Cool for about 5 minutes, then turn over onto serving pan. This is a quick and easy variation of the traditional flan.
