RICE PILAF 
1 1/2 c. UNCLE BEN'S® converted rice
1 sm. bell pepper, chopped
1 sm. onion, chopped
4 stalks celery, chopped
3-4 tbsp. butter
2 cans Campbell's beef broth and enough water of make 3 3/4 c. liquid
Salt and pepper to taste

Saute vegetables in butter until tender. Stir in rice and saute 1-2 minutes, stirring constantly. Add seasonings and liquid and bring to a boil. Lower heat and simmer 30-45 minutes until liquid is absorbed. Serves 5-6.
