PANSIT 
4 chicken breasts, cooked and shredded
4 pork steaks, cooked and shredded
2 tbsp. oil, 2 tbsp. oil divided use
1 sm. head cabbage, shredded
3 onions, sliced
3 carrots, cut in 1/8 inch thick matchsticks
1 lg. can mushroom pieces, drained and dried
1 pkg. Yokogiri udon (linguini sized Oriental noodle), cooked as directed and dried
1 bunch green onions, sliced
3 garlics, pressed
2 tbsp. soy sauce
1 tbsp. fish sauce (Asian markets) (do not omit this ingredient)

Heat oil in very large frying pan. Saute garlic about 1 minute. Fry pork and chicken about 2 minutes. Add cabbage, onions and carrots and fry until it starts to show fry color. Add mushrooms.

Add 1 tablespoon oil if pan is dry. Add noodles. Lift vegetables to top of pan. Fry and turn until the noodles start to show golden brown. Add soy and fish sauce. If you need more salt, use salt, not more soy. Season with pepper when all is fried, about 30-35 minutes from start to finish. Toss green onions into Pancit.
