POPPY SEED COFFEE CAKE 
1 c. oil
1 c. sugar
2 eggs
1 small can evaporated milk
1/2 tsp. vanilla
2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/4 c. poppy seeds
1 stick butter, melted
powdered sugar

Combine oil, sugar, eggs, evaporated milk and vanilla in large bowl. Mix dry ingredients (flour, baking powder, salt and poppy seeds) in separate bowl and add to liquid mixture. Pour into greased Bundt pan and bake at 350°F for 45 minutes. Allow to cool for 10 minutes before removing from pan. While still warm, brush with melted butter and dust with powdered sugar. You can also drizzle with a mixture of powdered sugar and lemon juice to serve as a dessert cake.
