LINGUINE WITH EGGPLANT SAUCE 
1 tbsp. oil
1 onion, chopped
2 clove garlic, minced
1 pared and diced eggplant
1 (28 oz.) can tomatoes or 1 qt.
1 tsp. basil
1 tsp. oregano
1/2 tsp. salt
1/2 tsp. pepper
1 lb. linguine
2 1/4 tbsp. grated cheese

Heat oil. Add garlic and onion, cook 5 minutes until soft. Add eggplant, tomatoes and spices. Reduce heat, cover and simmer 30-40 minutes. Cook linguine. Add sauce and sprinkle with cheese.
