MARSALA BAKED CHICKEN 
1/4 c. fine bread crumbs
1/4 c. grated Parmesan cheese
2 tbsp. minced parsley
1/4 tsp. paprika
2 1/2 lbs. chicken, skinned (8 pieces)
Vegetable cooking spray
2 tbsp. butter
1/3 c. cooking wine

Combine first four ingredients, stirring well. Dredge chicken pieces in crumbs. Arrange chicken in shallow baking dish, coated with cooking spray. Dot with butter. Cover and bake at 350 degrees for 30 minutes. Pour wine over chicken. Cover and bake an additional 15 minutes, uncover and bake 15 minutes longer.
