ASPARAGUS VINAIGRETTE 
2 lbs. asparagus
1 c. olive oil
2/3 c. lemon juice
1/2 c. fresh chives, chopped
2 tbsp. minced shallots
2 tbsp. Dijon mustard
Salt and pepper

Cook asparagus. Whisk together mustard and lemon juice. Slowly pour in olive oil, whisking with whip. Add seasonings. Pour over asparagus.
