GERMAN-STYLE POTATO SALAD 
5 lbs. potatoes
6 slices bacon, diced
4 tbsp. flour
4 c. water
6 tbsp. sugar
1 tsp. salt
1/8 tsp. pepper
1 heaping tsp. celery salt
3/4 c. vinegar
1/2 c. chopped onion
6 hard boiled eggs, sliced

Boil potatoes in their skins in salted water until tender. Peel while still warm. Cool. Slice into a large bowl.

Fry bacon until crisp. Remove and save. Stir flour into bacon fat and blend with a wooden spoon. Add water gradually, stirring until smooth and thick. Add sugar, salt, pepper and celery salt. Simmer and stir until dissolved.

Add vinegar and bring to a boil. Pour over the slices potatoes, add onion and sliced eggs, fold until well blended. When cool cover and refrigerate. Serves 12.
