6 mirliton 2 lbs. shrimp 1 lg. onion (chopped) 2 ribs celery (chopped) 1 sm. bell pepper (chopped) 1/3 c. cooking oil Garlic if desired Salt Cayenne pepper Black pepper Mrs. Dash Green onions (optional) Italian bread crumbs Parboil mirliton for 25 or 30 minutes until tender. While mirliton are boiling, peel and devein shrimp. Wash and refrigerate until ready to use. Cut 5 mirliton in half lengthwise after cooling and peel the 2 remaining and chop. Remove pulp from halved mirliton, being sure not to damage shells. In pot pour cooking oil; saute onions, celery and bell pepper, add mirliton and cook about 45 minutes on medium heat, stirring occasionally. Add shrimp and green onions, continue to cook for about 20 minutes or until shrimp are cooked. Season to taste. Add 1/2 cup bread crumbs and mix well. Fill shells with mixture. Place in baking pan and sprinkle with Italian bread crumbs. Add a little water to pan and bake in 325 degree oven until light brown. This recipe can be decreased or increased. Feeds: 5. |
