PROSSERS' FAVORITE LIGHT
PANCAKES
 
1 egg
1 c. buttermilk
2 tbsp. shortening, melted or salad oil
1 c. flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda

Beat egg. Add remaining ingredients in order listed and beat with rotary beater until smooth. Pour batter onto hot griddle. Turn pancakes as soon as they are puffed and full of bubbles but before bubbles break. Bake until golden brown. Note: We add 1/2 cup of fruit to this batter before baking or add fruit on top of batter on griddle (blueberries, apples, peaches, pears, etc.)
