HOT FRUIT AMBROSIA 
2 tbsp. butter
1/4 c. flour
1/4 c. brown sugar
1/4 tsp. salt, optional
1 (29 oz.) can sliced peaches, drained
1 (20 oz.) can pineapple chunks, drained
1 (16 oz.) can pitted cherries, drained
3/4-1 c. coconut

Preheat oven to 400 degrees. Melt butter in 1 1/2 quart casserole in oven. Remove, stir in flour, brown sugar and salt. Add fruit. Toss gently to combine. Bake 20 minutes. Sprinkle on coconut. Bake additional 10 minutes. May be served as a brunch side dish or as a dessert with ice cream.
