WHITE CHOCOLATE BROWNIES WITH CHOCOLATE CHUNKS | |
7 tbsp. unsalted butter 8 oz. white chocolate, finely chopped or shredded 2 eggs, room temperature Pinch of salt 1/2 c. sugar 1 1/2 tsp. vanilla extract 1 c. flour 4 oz. (1 scant c.) bittersweet chocolate chunks Preheat oven to 350 degrees. Grease 8" square baking pan with butter or shortening. Line bottom and 2 sides with aluminum foil that extends 2" over sides. Lightly grease foil. Melt butter, remove from heat and add half of the white chocolate do not stir. Let set until needed. Combine eggs and salt in large bowl. Beat at high speed for 30 seconds until frothy. Gradually add the sugar and beat for 2 to 3 minutes until light in color. Add white chocolate/butter mixture, vanilla and flour. Beat until smooth. Add remaining white chocolate and bittersweet chocolate. Scrape batter into pan. Bake exactly 35 minutes. Cool 4 hours, remove using foil. Peel off foil and cut. |
