APPLE - FILLED BRAN MUFFINS 
1/3 c. chopped apple
1/4 c. chopped walnuts
2 tbsp. brown sugar
1 tbsp. butter, softened
1/2 tsp. ground cinnamon
1 1/4 c. flour
1/3 c. sugar
1 tbsp. baking powder
1/4 tsp. salt
1 c. whole bran cereal
1 c. milk
1 beaten egg
2 tbsp. oil

For Apple Filling: In a small bowl stir together apple, nuts, brown sugar, butter and cinnamon. Set aside.

In a large bowl stir together cereal and milk; let stand for 5 minutes. Stir egg and oil into cereal mixture. Add cereal to dry ingredients. Stir until moistened. Grease muffin tin. Spoon about half of the batter into muffin pan. Top each with a rounded teaspoon of apple filling and then the remaining batter. Bake in a 400 degree oven about 20 minutes or until golden. Makes 12 muffins.
