BREAD PUDDING 
9 slices white bread, torn in pieces
1 1/4 c. sugar
4 eggs
13 oz. can Carnation evaporated milk
2 c. milk
2 tsp. vanilla extract
1/3 c. melted butter
2 tbsp. coconut or more if desired
1/4 c. raisins (soaked in 2 tsp. light rum) - optional

Soak bread and coconut in 2 cups of milk and can of evaporated milk. Beat eggs until fluffy. Add sugar and beat until slightly thickened. Add vanilla and butter, mix well, then stir in bread and milk mixture. Stir well. Add drained raisins. Let this whole mixture set for 3 to 5 minutes, then pour into dish. Bake at 425 degrees for 20 minutes. Use a 2 quart dish.
