BARBECUED SHORT RIBS 
3-4 lbs. short ribs of beef
1/2 c. flour
1 1/2 c. bottled barbecue sauce
1/2 c. each chopped green pepper, onion and celery
1 tsp. salt
Generous sprinkling of pepper

Trim excess fat from ribs and cut them in serving size pieces. Combine flour and seasonings and rub into the ribs. Place bag in pan and put ribs in bag. Add all other ingredients. Close bag and follow instructions for Brown-In-Bag cooking.

Bake in preheated 325 degree F. oven 2 - 2 1/2 hours or until meat is tender when pierced with a fork. Remove from oven.

To make sauce snip corner of bag and pour juices into a pan. Be sure to protect hands with pot holders. Skim off excess fat. If thickening is desired, make a flour and water mixture and add, stirring and cooking until proper consistency. Slit bag and remove ribs. Arrange on serving platter. Spoon sauce over food or serve in separate dish.
