ZUCCHINI BREAD 
3 eggs
1 c. salad oil
2 c. sugar
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
2 c. raw zucchini, grated (unpeeled)
3 tsp. vanilla
1/2 c. nuts

Cream eggs, oil and sugar. Sift together flour, salt, soda, cinnamon and baking powder. Stir all together with zucchini and then add vanilla and nuts. Pour into 3 small, ungreased 3 1/2 x 7 1/2 inch pans. Bake at 325 degrees for 1 hour.
