JEWELED FRUIT CAKE 
8 oz. dried apricots
8 oz. pitted dates
3/4 lb. whole Brazil nuts (2 1/2 c.)
1 c. drained maraschino cherries
1/3 lb. red & green candied pineapple (cut up)
3/4 c. flour
3/4 c. sugar
1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
1 1/2 tsp. vanilla

Oven 300 degrees. Line loaf pan with aluminum foil. Mix all ingredients, leaving whole unless otherwise specified. Spread evenly in a bread loaf pan. Bake 1 hour and 45 minutes or until pick comes out clean. If necessary, cover with aluminum foil for last 30 minutes. Remove, cool, wrap and refrigerate. Slice with very sharp knife.
