FANTASTIC CARROT CAKE 
2 c. flour
2 c. sugar
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon

Sift above together and mix. Add:

1 1/2 c. Wesson oil
3 c. grated carrots (about 10)

NOTE: Measure oil into a blender, then add chunks of "peeled" carrot until the 4 1/2 cup level is reached.

Add 4 eggs, 1 at a time, mixing well after each. Bake approximately 30 minutes at 325 degrees.

ICING:

1 stick butter
1 (8 oz.) cream cheese
1 (7 oz.) box coconut
1 box (sifted) powdered sugar

1 tsp. vanilla
1/2 c. nut pieces
