TORTILLA CHEESE CASSEROLE 
1 can cream of mushroom or cream of chicken soup
1/2 onion, chopped
3/4 soup can milk
3-4 soft flour tortillas
1 tbsp. olive oil
6 oz. shredded part-skim Mozzarella cheese
4-6 oz. cooked chicken or turkey

Saute onions until tender. Gradually add soup and milk to the onions until mixture is heated through. Add chicken or turkey. Place a thin layer of soup mixture on the bottom of an 8 or 9-inch square or round casserole dish and cover with a tortilla and a layer of cheese, like lasagna, ending with a layer of cheese on top. Cover with foil and bake at 350 degrees for 30 minutes. Allow to set 5-10 minutes.
