THE GREAT AMERICAN APPLE PIE 
Pastry for 2 crust (9 inch pie), unbaked
6 to 7 peeled sliced apples
2 tbsp. flour
1/2 c. granulated sugar
1/2 c. brown sugar, packed
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. ginger
Dash of salt
1 tbsp. butter

Line 9 inch pie pan with pastry. Simmer apple slices in 1/4 cup water until slightly tender, about 5 minutes. Cool and heap in lined pie pan. Combine flour, sugar, spices, and salt; sprinkle over apple slices. Sprinkle lemon juice. Dot with butter. Adjust top crust and slits for steam to escape. Seal edges. Bake in preheated 450 degree oven for 10 minutes, then reduce oven to 350 degrees. Bake 45 minutes longer until crust is golden brown. Serve pie warm or cold with cream, ice cream, whipped cream, or Cheddar cheese. Makes 8 servings.
