TORTELLINI SOUP | |
5 c. boiling water 1 (10 oz.) pkg. frozen mixed vegetables (peas, carrots, etc.) 9 oz. fresh cheese or spinach tortellini (about 1 1/2 c.) 1/2 c. sliced green onion 2 tbsp. beef soup mix 2 tbsp. tomato paste 1 tbsp. fresh lemon juice 1 tbsp. onion flakes 1 tsp. garlic flakes 1/2 tsp. basil 1/8 tsp. black pepper 1/4 c. grated Parmesan cheese In large pan heat to boiling all ingredients except cheese, stirring frequently. Reduce heat and simmer 10 to 15 minutes until tortellini are tender. Ladle into bowls and sprinkle with Parmesan cheese. Serve hot with crusty bread. Makes 4 servings. I use Watkins Beef Soup Mix. You can substitute beef bouillon but it will not be as flavorful. |
